There are two types of mezcal plant one is the typical Pechuga plant that the leaves are wide and there is the Espadilla Agave Plant, this one on the image is Espadilla is, called Espadilla because the leaves are thin like a sword, espadilla means sword, the story goes like this, the better and more common mezcal is from espadilla, the mezcal made with this kind of plant is better for the body as it doesn't hit you after drinking it dosent hit you with a hangover, like the other plant, pechuga, that one will hit you with a bad hungover, so it depends on what are you looking to drink, I can guess people who know about the differences prefer espadilla, but people who dosent like tourists always falls in to pechuga, the bars are kind of tricky with it because they will sell the pechuga more expensive and will tell you pechuga is better, but in taste is almost the same, for me espadilla is better. After distilling the Agave, we see the process of getting the flavor to the drink this is one of the last parts of the distillery​ process and is just before getting the clean Mezcal
